Olive Oil Tea Bread by Carole Warner

Servings: 6

Preheat oven to 325 degrees. 


Dry Ingredients: 
1 1/2 cups organic whole wheat pastry flour
1/4 cup Zsweet® sugar substitute (adjust to taste)
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp course salt

Wet Ingredients:
2 large eggs
3/4 cup whole milk (low fat optional)
1/2 cup very mild flavored olive oil
1/2 tsp vanilla (optional)
3 generous tsp quality lemon extract
3 tsp fresh or rehydrated lemon rind

Beat wet ingredients together and add slowly to dry ingredients. Beat until smooth. Pour into loaf pan and bake for 40-45 minutes, or until knife blade comes out clean. Freezes well.
