Simple Pumpkin Muffins
1 ½ cup almond flour
½ cup vanilla whey protein powder
1 cup Zsweet®
3 tsp pumpkin pie spice
1 tsp baking soda
¼ cup melted butter (we prefer Kerrygold)
1 cup canned pumpkin
Preheat oven to 350°.
In a large bowl, combine dry ingredients. Add butter and mix well. Mix in pumpkin and eggs until well combined. Fill greased or paper-lined muffin cups.
Bake at 350° for 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
